Sea Scallops with Minted Pea Puree

Sautéed sea scallops with a minted pea puree on a toasted point.

 

Goat Cheese Canapé with Sweet Peppers

Toasted bread topped with a goat cheese mixture and a roasted pepper salad

 

Smoked Salmon with Dill Sauce

We smoke our own salmon and serve it on a fried wonton and top it with a dill sauce

 

Dinner

 

Spinach Salad

Spinach and pancetta tossed in a balsamic vinaigrette and served with candied pecan cheese rounds

 

Chilean Sea Bass

Grilled sea bass served with a tomatillo salsa with asparagus wrapped in ham and coconut rice

 

Grilled Filet Mignon

Steaks grilled to a medium temperature and served on a bed of sautéed mushrooms and crispy potato gratin. Served with Madeira and Soubise sauces.
